Can you say "Lumpias"?  We had a fabulous time learning how to make
these delicious spring rolls. Kelli Pape and Laurie reed's mom, Carolyn
taught the RS women how to make these during our monthly enrichment night.
Seems like a lot of work, but very much so worth it!
We had a great turnout. Twenty-three women, three children and  three men
were there to taste the treats.
Alberta brought some rice and the ladies turned i into scrumptious pork
fried rice. Carolyn also made some homemade sweet and sour sauce.
the recipe for the Lumpias is below.

LUMPIAS
2 cups of cooked finely chopped chicken
1 head of green cabbage finely chopped
2 bunches of green onions, small dices
6 stalks of celery, small dices
2 pkg of wrappers (s/b about 60)
salt & pepper to taste
couple of dashes of soy sauce





Take each wrapper and place about a tablespoon of mixture and roll up
Be sure to moisten the end as you wrap so that it will stay closed during
frying. Works best if fried in peanut oil @ 350 degrees. Brown lightly on
each side and then place on paper towels to absorb the excess oil.

Serve with sweet & sour sauce
6 tbsp of sugar
2 tbsp of corn starch
Combine & add
1 cup ketchup
1/2 cup of water
Bring to a boil while stirring and add a drop or two of red food coloring
to desired
color.
